There are a couple of things I love about this recipe. First and foremost, it’s delicious. Second, it can be eaten over regular rice or cauliflower rice depending on how many carbs you have left for the day. And third, it’s ready in under 30 minutes. Simple enough to make for a weekday dinner yet sophisticated enough to serve to company.
